About how many people do each of these meals serve? I’m definitely going to try this, but I’m curious if two chickens will really last our family of 6 for 3 (or is it 4?) meals. Which brings me to my next question: Would the first chicken meal be the actual roast chicken, or do you save the roast chicken for making just the three meals you mention? Same with the roast? Thanks for the ideas!

Do you prefer ghee & lard over butter for the sautéing and why? Just curious. Also, how long can you keep homemade broth in refrigerator. Sometimes I take it out of freezer and don’t use all of it . Thank you for the helpful video! I loved it.

Butter tends to burn at higher temps while ghee and lard do not. I think the preferred way to eat butter is raw anyway.
FWIW I keep my stock in the fridge up to a couple of weeks. It helps if it’s covered with a ‘cap’ of fat – that helps to keep it fresh longer. If in doubt, smell and/or taste. You’ll quickly find out if it’s spoiled.
