Despite the simplicity, mousse is also elegant and universally delights both family and guests who may stop by for dinner.
The sweetness of the fresh (or frozen) strawberries allows for minimal use of a whole food sweetener.
If you prefer extra firm mousse with a few grams of protein, blend in optional whipped egg whites. They should always be from freshly cracked eggs. Do not use liquid egg whites or egg beaters from the store.
This is a great after-school snack for kids! Healthy mousse made with strawberries is loaded with nourishing fats which steady the blood sugar and mood after a long day in the classroom!
It’s also a good source of whole food Vitamin C, which is easier to absorb and better for the body than synthetic (usually GMO sourced) ascorbic acid supplements.
Tip: Leftover egg yolks are great to add extra nutrition to smoothies, broths, or soups. They can be refrigerated in a glass container with a tight-fitting lid for a day or two until ready to use.
Strawberry Mousse (3 ingredients)

Ingredients
- 1 pint strawberries
- 1 cup heavy cream
- 3-4 Tbl maple syrup
- 3 egg whites optional
Instructions

Pulse fresh or thawed strawberries with maple syrup in a food processor until almost smooth, leaving a few small chunks.

In a large bowl, whip cream and strawberry mixture with a hand mixer until fluffy.

In another bowl, whip optional egg whites (separated from fresh eggs washed in warm, soapy water first) with hand mixer until stiff peaks form.

Fold in optional whipped egg whites until just blended for a firmer strawberry mousse.

Serve immediately. Refrigerate leftovers in a glass bowl with a secure lid for up to 4 days.

Thank you, for the recipes. I love strawberries and eat them often because it helps me handle my sweet tooth. I always buy the organic ones because of the high amount of pesticides. Unfortunately, I’ve heard that all strawberry starter plants are treated with something genetically to make them produce large fruit. Do you know if this is okay for human health?

The organic strawberries at the store are typically hybrids and grown hydroponically without soil which makes them bloated and overly large and much less sweet. Get heirloom seeds and sprout strawberry plants yourself in healthy soil is a good way to go.
