I’ll be honest … my kids prefer breakfast waffles to pancakes when I give them the choice. The reason is that waffles seem to work better as leftovers. They toast up easily as an afternoon snack or the next morning when Mom and Dad are too busy to make something from scratch.
Unfortunately, excessively sweet waffles for breakfast is the norm in our American culture. Just note the amount of sugar per serving of the familiar frozen waffles at the supermarket! And this is before any syrup is added!
Fortunately, it is not only possible, but very easy, to enjoy a healthy breakfast with waffles as the centerpiece! Just be sure to make them with a carefully chosen flour and lots of eggs and butter so that any syrup used is counterbalanced by plenty of healthy fats. The waffle recipes below fit that bill on all counts.
