Anyone who reads this blog for awhile will quickly realize that I am not a vegetarian! However, I prepare plenty of vegetarian dishes and meals for my family.
The reason is that we consume lots of homemade bone broth with our meals, which significantly reduces the amount of meat necessary in the diet. Frugal and sustainable ancestral societies nourished themselves in a similar manner.
Cooking plant-based is certainly a budget friendly way to cook. My preference is for these vegetarian recipes to be easy, simple and quick as well as healthy. Usually, I prepare them for dinner, as our family tends to prefer lighter fare in the evening with a heavier meal containing meat earlier in the day.
Even though these vegetarian dishes contain no meat, there is still plenty of animal foods in the form of butter, dairy, and/or eggs. Hence, they contain plenty of healthy fats and complete proteins which satisfy and nourish adequately, which is key to staying away from too many sweets!
