When it comes to soup recipes, I gravitate toward easy ones that are fast to prepare. Too many ingredients and spices etc etc is just not something I typically have time for. This is because we usually eat soup for dinner in our home, and hectic after school activities require that prep and cook time be as short as possible.
In addition, the timing of some of these activities requires that they need to eat two dinners. This is very stressful on a parent who cooks from scratch, I can tell you! Who wants the kitchen to be “open” from 4-9pm? This is exhausting.
This is where soup comes in. Preparing an easy soup recipe right after school about 4pm provides them with a quick nourishing cup pre-activity. Then, it sits warm in a pot on the stove throughout the evening hours to eat in a bowl as a main dish with some healthy crackers or a salad when they get home.
