Great tips! Thank you. I’m living in France and enjoying all the free-range beef and pastured eggs. I live in a tiny apartment with the smallest kitchen and fridge you’ve ever seen! Will be using some of your tips – although I can’t freeze anything. Planning is definitely helpful.

On the chicken broth, why simmer no longer than 24 hrs.? I thought the longer, the better.
Mikki
That was going to be my question. I know you don’t need to simmer chicken as long as beef to obtain that wonderful gelatinous affect we are all after, but is two hours long enough? I’ll try it and see. Just obtained my first chicken feet and am simmering my chicken stock with those as I type. And by the way, great video which I’ll pass on and I agree with Karen, cute top! Thanks for all you do!
Mikki
Oops, not Karen, Dana!

You can simmer longer if you like. It’s a time saving idea video though so 24 was suggested 🙂

I know this isn’t the point but I like your shirt in this video

Thanks! It’s very comfy too.

Thanks as always for the great tips! Just curious why in this video you suggest roasting the chicken bones even after the chicken was roasted prior to making stock?
Sarah, TheHealthyHomeEconomist
It just makes the flavor of the stock even better!

These are really great tips Sarah! We are planning a 90 day, no grocery store challenge in 2012. I anticipate this will help us save a ton of money for the very reasons you have mentions here:) Thank you for the encouragement!

I love the idea of a 90 day no grocery store challenge! That is so hard core! Awesome!

Great video with great tips. Very intrigued with the frozen liver “pills.” Am I right to assume the liver is raw? Organ meats are the one NT area that I’ve avoided, but I guess it’s time to take the leap. 🙂
Teresa
Me too! I guess now we have no excuse.
I’m gonna get me some liver!
